Why we eat what we eat.

Quite a mouthful (no pun intended) right?  My goal in writing this post is to expound on the question of why we choose what to eat.  I have thought about this countless of times throughout the past few years and I am finally coming to a growing conclusion about what that reason is.

Think about this: everyday, (especially among the food-healthy-living blog community) we are aware and thinking about what we eat.  We look forward to and/or stress over our next meal.  We grocery shop.  We (as food bloggers) take pictures of the same thing we eat, day after day.  We even plan our meals in advance half the time.  These facts lead to the question of why?

Why do some people rely on fast food?  Why do some other people fear the dinner table and the communal act of eating?  Why do others always return to what is familiar to their palette?  Why do some of us eliminate specific foods all together?  Why are we constantly labeling ourselves of any one of the following: flexitarian, vegetarian, vegan, raw foodist, gluten-free, fat/carb-free, wheat-free, soy-free, pescatarian, meat-free, glutton, anorexic, recovering anorexic, clean eater, etc, etc??  The list even goes on.

I have been discovering most of the answers to these questions in my Gastronomy class- from our discussions to our required reading materials.  Gastronomy as defined by Dictionary.com is “the art or science of good eating.”  I am NOT saying the above list is not good eating.  It IS- otherwise I would not consume a head of raw broccoli on a daily basis, but I do think we have forgotten the fact  that we are omnivores.  Unlike animals,  we are designed to eat most, if not all food!  Jeffrey Steingarten writes in the introduction to The Man Who Ate Everything, “Our teeth and digestive systems are all purpose and ready for anything” (Steingarten 6).  He even goes on to state that as humans we need variety to stay healthy!  Yes, some may have allergies and others were made biologically  inapt to devour wheat, and some of us may choose to not eat certain foods because morally, we believe it to be wrong- but other than that: we base our decisions of eating and not eating by our own personal preference!

Our decisions to eat are based on preference.  What we want.  What we do not want. Our preferences derive from our life experience up until today.  It may seem like an obvious fact of life- yeah, yeah, we do what we want- but it goes beyond that.  Since discussing this in class, a light has gone off (and ironically will not shut off) in my head that sort of explains why as healthy living bloggers, we blog.  We blog because we each have a story regarding our health, weight loss, recovered eating disorder or case of disordered eating that somehow involves food and our previous preferences that have come full circle to our struggles and eating preferences we now have today.

Eating also coincides with emotion.  Food and emotion are so commonly linked that it isn’t funny. “Emotion” is also associated with “disorder” which explains to me why many young women divert to eating disorders.  I do not want to decipher into this topic very much because I cannot speak from direct experience nor do I do want to try and explain something I am not fully educated about- but, it should be common sense that eating disorders are a unbalanced mixture of eating and emotion.  Likewise, the same concept applies to binge eating or over-gluttonous behavior.  All of these habits are linked from emotion to food because the act of eating is an extremely sensual, emotional experience.   I wanted to share with you an excerpt from a textbook of mine, titled The Taste Culture Reader from an article called “Food and Emotion” by Deborah Lupton.

“An appetite is an emotionally flavoured hunger: the appetite experienced when a favourite food is being cooked   and is almost ready to be served differs from that of the simple hunger felt when the stomach is empty and requires food.  So too, lack of appetite is often an emotional response, an interaction between a feeling of anxiety, nervousness, grief, or even joy or elation (the emotion of being ‘in love’ is often associated with a loss of appetite)(Lupton 321).”

That being said, I think a lot of us (myself included) bury ourselves in our safe foods.  Either an incident, bad experience, failed recipe, “fat” year, case of food poisoning, or horror memory has turned us off of either entire groups of  food, or specific textures and flavors of a single ingredient.

Jeffrey Steingarten states this in his naturally-bold-and-well-educated-celebrity-food-critic-manner, but he is unfortunately, right.  I would not be able to argue this statement even if I wanted to.  This fact of human nature saddens me because I am ( what I believe to be biologically) a foodie.  I love trying new foods.  I love the craft of cooking and the joy and excitement a person can feel simply by trying a new food or splurging ($ 250 later) and indulging (5000 calories later) on a ten course tasting meal a la French Laundry.  We as humans and omnivores, BY NATURE, should not have to worry about whether or not our tub of oatmeal was processed in a wheat plant, or whether or not our vegetables were cross contaminated with raw beef.  We were made to eat everything.  But we DO worry!  We have fears and anxieties, preferences and aversions to simple things from fluoride laden toothpaste, dirty door handles, eating out and showering  to foods like dairy, meat, sugar, soda and caffeine.

BUT: we are all different.  I am not saying the vegetarians of this world should start eating meat- because let us be honest- if everyone ate everything, it would screw up the whole “supply and demand” aspect of our world- and I do not even want to go there. I do think it is important to recognize why we do what we do.  From our way of eating to our way of life.  For instance, I have my own set of fears and aversions for certain foods like carbs after a certain time of day, fast/highly processed foods and cheese- but I have my reasons much like all of you do.  I do not want these preferences and aversions to get in the way of myself living my life either.  I get up everyday not only because I am looking forward to my cup of coffee and bowl of breakfast- but because I truly want to get up.  Much like food, I enjoy life.

Just a reminder- I do not post everything I eat- and everything here does not go eaten!  How I’ve been surviving eating my way through culinary school- umm.. by NOT licking my plate clean.  Whenever I make my own food- usually, I eat everything I make.

Tuesday:

Maple-nut oatmeal for breakfast.

Lunch: Shrimp salad on crostini appetizer.  Sauce-grapefruit, lime or pomegranate- I honestly cannot remember.

Veal Osso Bucco with sauteed spinach and brown sauce.

Dinnnerr: salad bar and greek yogurt on the side.

Wednesday:

Cocoa-coconut oats with dark chocolate dreams peanut butter.

More snow on my walk to class.

Lunch appetizer: gravad lax with fennel and arugula salad and dill.

Stuffed boneless chicken breast with broccolini and Israeli couscous.

My friend Alyssa at dinner. She is a new baking and pastry student. :) (Not my fellow Tucsonan, they both just happen to have the same name.)

I ate at “Cuisines of Americas” kitchen I want to say?

Red snapper with sweet potato sauce, black bean puree, coconut rice and grapefruit salsa.  Best meal so far!  So fresh and yummy. The fish was perfectly cooked.

Thursday!

Breakfast: Egg white coconut oats with tahini, maple syrup and a few chocolate chips.

Tights!

I told you it looked like Hogwarts.  They call the CIA (so I’ve been told) “The Hogwarts of Hudson Valley”.

Lunch Thursday: butternut squash soup with a garnish of candied ginger and pepitas.

Roasted duck leg with more brown sauce and brussel sprouts and carrots!  I was so happy to see brussels!  Not quite as good as my brussel chips though.

Dinner Thursday: Mahi Mahi with pineapple salsa, sauteed spinach and grilled vegetables!

Snack later on:  I took a hint from Kaysie- she suggested a sliced apple with yogurt sauce made of plain yogurt+peanut butter in my dorm.  Naturally, I chose greek yogurt+tahini+little maple syrup for some sweetness, and it was soo tasty.  Definitely recommend it!

Ahhh it has been such a long weekend. And what a long post!  I feel like if I posted more often- it would actually take less time to write.  We will see.  I have a bunch of writing assignments coming up and I figure if I try and incorporate them as blog posts as well, they might be more fun to write.  I have brain storming to do!

This week at the CIA: Quarterly Career Fair, photography club, and my chef whites/uniforms are finally arriving! This weekend is Valentine’s Day.  I think I will be spending it with a girlfriend in New York City.  My first weekend trip!  What better way to spend it right?  Do you girls have Valentines this year?  I’ve always been a big supporter of buying Valentines and handing them out in class, but I have a feeling college kids are so over that!  Oh well.

I also have always loved Valentine’s Day because it usually falls on my birthday week!  It’s been such a hectic time in my life that I almost forgot about it!  I am usually one to count down months ahead of time too, but here we are already!  It is on the 18th which is a week from Thursday.  I will be 19. GAH. (In case you don’t know me too well, I feel like I’m THIRTY.)

Oatie in a pinch

My craving for Heather’s maple-nut-oaties finally subsided yesterday when I realized that I had almost every ingredient in my dorm room to make an oatie, which I have previously made before.

Now.. these were not as good because I could not bake it, so it didn’t turn out quite as chewy, but the flavors were definitely there!  Success.

I combined approximately: 2 T instant oats, 1 t almond butter, 1/2 T maple syrup, 1/2 T unsweetened shredded coconut, 1/2 t vanilla extract, a big shake of cinnamon, 6 chocolate chips.  I formed it into a ball and stuck it in the freezer for a few minutes.  This adds up to be about 130-140 calories- which some might say is calorically dense- but I’d probably consume this in a day anyway with my mass consumption of chocolate chips and nut butter by the spoon. C’est la vie right?

Speaking of flavor- last night I went to the CIA’s “Fine Grind Society” meeting- basically a glorified name for Coffee Club.  But fancy name aside- it was definitely a really neat, informative meeting and environment!  We did a coffee cupping which I had never done before, and quite a few people were there to meet to.  I will definitely be returning.

Now a little background: This weekend the CIA is hosting the American Bocuse D’or competition.  Bocuse D’or is the world’s culinary olympics held every four years in France.  It is where the best of the best show off their skills.   The USA hosts their own Bocuse D’or to determine which American chef will be representing our country in France.  This year it is here.  At the CIA.  This weekend.

I could not have come at  a better time.  The competition is open to the public- but all students here have the opportunity to go and be a spectator.

This Wednesday, Thomas Keller (celebrity chef, owner/founder of French Laundry) held a demo which I was lucky enough to attend- more on that later- but all day today many chefs are holding book signings, cooking demos, speeches, etc. on campus and tomorrow is the Bocuse D’or.  Famous people in this industry are going to be everywhere.   I cannot contain myself.  The buzz around campus is insane.

How does this tie into Coffee Club?!!

During our cupping… Thomas Keller and Daniel Boulud literally walked right in to say hello!  Just like that.

First I saw Thomas Keller… followed by Daniel.. it was amazing.

I will never second guess any decision I have on attending coffee club, ever again.

That’s it for now!  I have major posts scheduled this weekend and next week, but thought I’d share my little batch of excitement that went on yesterday.  Currently.. about to go take a math test!

Surviving the weekend

Guess what?! I survived my first weekend of dorm living!  So far the CIA has treated me well in all facets of my life.  Honestly- if I’m going to be paying this much to go here: I am going take full advantage of every opportunity, every meal and every resource I have surrounding me!  My options are literally ENDLESS.  It’s overwhelming how much potential someone could have here at this school just by attending class alone.  That is why I am so grateful for this blog and the blog community- because it gives me (as corny as it sounds)- something worth fighting for.  Not like I’m fighting against Voldemort or anything- but I do feel like I would be letting myself down and letting the blog down if I threw this once in a lifetime opportunity out the window.

My dorm room eats are only the beginning too!  I keep telling myself as long as I can do well in school and rise above the status quo and manage my time: I see no reason why I should skip the gym or succumb to Chinese take out for dinner.  Not that I have any problem with Chinese take out!  If you dig it- dig in.  I personally do not dig it.  Speaking of which.. stay tuned for a post about why we eat the way we do.  A recent lecture in my Gastronomy class about food preferences and aversions has inspired me to think about why I eat the way I do, also pertaining to how the blog world eats.  You know what I’m talking about ladies. ;)

Breakfast Saturday!  Before a rocking power hour of vinyasa:

Tahini+maple syrup oats are some of my favorite oats ever.

Leftover *salad bar* veggies that got a little freezer burn from hanging out directly underneath the freezer section of the mini fridge.  Did I eat in anyway?  Of course.  Alongside some microwaved egg whites for lunch.  That smelled like ass. And kind of tasted like ass too.  I’m going to have to make a mental note to eat my carton of egg whites in my oatmeal- and NOT by themselves.

After lunch my new friend (yay a new friend!) and I decided to rough it and walk to Starbucks.  It was only about a mile and a half away from CIA- but it was 12 degrees outside!  It was cold cold cold.  Naturally, a venti americano was in order.  We decided a taxi was definitely necessary if we were going to make it all the way to the mall- which was about a 15 minute drive further down from Starbucks.  A few hours of shopping later- we ate a quick dinner at the mall and took a pricey taxi back to our dorm.

I snacked on popcorn and carrot sticks, a la College Smoothie Girl and called it a night.

Sunday morning I awoke to this:

Oat bran!  With banana slices, almond butter and chocolate chips.

Lunch was leftover salad bar, two carrot sticks, a can of tuna, a drizzle of tahini and a pile of Pirate Booty.  My favorite snack!  (And second *preference of processed foods* to yogi chips.) ;)

Dinner Sunday: *paid for* salad bar from the only open dining option on the weekends called “Court-side Cafe” at the Rec Center- this time two different varieties of pickles and pepperoncinis were involved though!  It was a big pile of veggies and I was happy.

Monday morning… another school day, another business casual outfit!

I do have more pant options people- but the weather is just not allowing for any of then!  I promise to bring out the variety soon.

Breakfast Monday:  Voila (Thanks Neela!) Egg white oatmeal!  I use 1/2 cup instant oats, 1 cup water, approximately 1/3 cup of egg whites- microwaved for four minutes.  The fluff factor is amazing.  So good.

Topped with almond butter and unsweetened shredded coconut.

Lunch was another great meal at the Banquet/Catering dining room:

Appetizer: Wild Mushroom Risotto.  One of the best risottos I’ve had.. I used to make risotto a lot for different jobs I’ve had- and this surpassed anything I’ve made previously by a lot.

Herb crusted salmon with sauteed spinach and a Beurre Rouge.  (Basically a butter sauce that uses a red wine variety instead of white I believe.)

Dinner was at one of the Cuisines of Asia kitchens!  I believe this was a Korean dish.. and I honestly had no clue what I was eating as I ate this.  Hunger was victorious over any concern I had at the time of what I was eating.  All I really cared about what that I finally ate some chicken for protein!  Surprisingly.  And yes- that is a small, but whole chicken.  I ate most of the breast.

Followed by some much needed Cocoa powder+water+stevia microwave action.

I am officially tired.  There is so much going on all the time here!  And despite me not doing anything yet.. I just feel overwhelmed with what is at my fingertips!  I also am starting to miss my house, my kitchen, my friends and my family a teensy little bit.

I did meet a fellow culinary student the other day that was FROM TUCSON.!!! Can you believe it?  She’s already been through the program for over a year so she is definitely a great friend and contact to have.  We met for coffee yesterday and I was in awe of her kindness and willingness to chat with me.  If you’re reading Alyssa- thanks for all your graciousness!  You’ve been awesome.

Okay- I think I’ll have a better post lined up in the next couple days.  Right now my anticipation for the final season of LOST to start is running too heavily on my mind.  I know some other girls would agree!  Catch up with you all later. XOXO

A snowy dorm breakfast!

Welll.. where did we last leave off?  I was getting excited about my first dorm room breakfast of oatmeal and french press no doubt…  And let me tell you- I FORGOT how good oatmeal in the microwave was!  Here is how it goes down: I buy a big container of quick cooking oats and microwave 1/2 cup with 1 cup water and whatever flavorings I like- I throw in (cinnamon, vanilla extract, sometimes stevia, sometimes banana, etc.) and 3 minutes later.. wah-la!  The creamiest bowl of oats ever!

Reese’s Oats in the style of K- with a spoonful of Arrowhead Mills peanut butter and carob chips.  Wednesday breakfast success.

With still relatively nice weather on Day 2 of Orientation I donned a nice pair of lace up pointy toed shoes, grey pants and a dark green turtle neck sweater.

—————-Apparently lunch and dinner were not very memorable- because I cannot locate evidence of these meals ever occurring. Failure.————

Breakfast Thursday though was absolutely fabulous.  Before my first day of classes I fixed chocolate protein oats in the microwave:  In the bowl went- 1/2 cup oats, 1 cup water, 1/2 packet of Spirutein Chocolate Whey Protein, 2 T cocoa powder- with a spoonful of Dark Chocolate Dreams.  So delicious!  This bowl was inspired by none other than Miss Mitri over at All in the Oats.

While eating this gorgeous bowl of oats- I opened my blinds and Oh my goodness! SNOW!!!

Yeeaah. I get it people.  Not a big deal whatsoever.  It snows everywhere, all the time.  My “business casual” outfit it totally NOT a big deal at all.  I get it.  But this is all new to me, so forgive me for my unnecessary excitement and overwhelming amount of pictures due to said, excitement.

Copied yesterday’s outfit except opted for a black v-neck sweater with a red scarf which *hopefully* added a little bit of variety. ;)

Notice Mr. Backpack walking to class… pretty sure I have all my classes with this dude- and it seems like I’m following him everywhere, we’re even in a class project together by coincidence for my class of Gastronomy, and he just happened to sneak his way into my snow picture.  I promise though- I am NOT stalking him!  Aghcck.

Lunch while it snowed Thursday: I seriously felt like I was at Hogwarts watching the pillows of white forming outside the window of the banquet dining room.

Appetizer of tomato soup- perfection on a snowy day.

Meatloaf! Creamed corn, green beans and mashed potatoes.

Dinner Thursday: From “Kitchen of the Mediterraneans”- “Trout Almondine” with squash and green beans and untouched buttered parsley potatoes. <<<I know from certain *restaurant kitchen experience*- A LOT of butter goes into those babies!

The veggies were delicious though!

Breakfast Friday:

To my surprise, I snoozed my way through my alarm one too many times, so instead of a leisurely oatmeal/french press breakfast I had to adapt to a banana hammock- made with almond butter and carob chips, chocolate brownie z-bar, and Via coffee breakfast.  C’est la vie.  :) Kudos to Katie though for making such a quick, easy, go-to snack/meal SO TASTY!

Lunch Friday:

Fancy fish sticks with a remoulade sauce and coleslaw for appetizer.

Lunch entree was one of my favorites so far: Roasted pork loin with a green chili/tomatillo? sauce, potato cake and chorizo stuffing.  Underneath the pork lay some fancy-shmancy squash that could not be identified by any of the culinarians sitting at my table.

After lunch by Friday it was quite sunny outside!  But daaamn cold.  We’re talking 6-10 degrees.  Ladies and gentlemen- I have never even felt this kind of weather.  I now understand why Rose (while laying in the middle of the ocean while Titanic was sinking) could not physically yell for help.  It’s so hard to even breathe/talk!

Dinner Friday:

Some kind of andouille shrimp stew.  I ate the shrimp and had a bite of the cornbread.  Yum yum yum- the foodie in me was getting very excited about this cornbread.  Not gonna lie.

Salad bar!  Raw vegetables!  First time seeing raw vegetables all week- besides the enormous bag of carrots I have in my mini fridge.  I thought you guys would be proud.

Other than that.. I’ve been eating my fair share of chocolate and carob in my room.  I also drink some Heabified/Averiefied Hot Chocolate- Every. Single. Night.  What else is there to do?? It is so darn cold outside, that this drink is perfection.

So tell me, what’s your favorite dorm room/small apartment/microwave breakfast-lunch-dinner?  Today was  a Saturday- which meant nothing was open on campus and I had to improvise.  It went okay.  I have plenty of food, so never fear- I’m at culinary school…there is no way I’m going to starve!  I have also been surprising myself at how quiet I can be with washing dishes, making oatmeal, microwaving my water, etc. in the early mornings.  I have two roommates mind you- and all three of us have a different schedule at this point!  All sleeping at different times and whatnot.

This morning I did a yoga podcast in the fitness classroom studio- no one was in there, and it ended up being one of the best yoga classes I’ve ever done.  Not being at home doing yoga is so much less stressful!  Doing yoga in my bedroom at home can be very distracting at times, and here the hour just whizzes by.  Thankfully.

I think I’m going to start replying to comments in the comment section- y’all are so encouraging and sweet and you have no idea how much your comments mean to me- so feel free to check back, get reply notifications, but no worries if you never see my reply.

Also: A lot of you have asked about my roommate(s). I have two- and I definitely lucked out. Both are seemingly normal, my age, and I share similarities and differences with both of them. I don’t see us being best friends which is probably realistic, but they are super easy to talk to and be around. They both don’t mind about my early morning coffee making habits either- which is always a plus in my book!

Also a little hello to any lurkers from my culinary class!

Greetings from the C.I.A.!

^With NuNaturals stevia in a an almond butter jar, Via in a tahini can and my French press- I’m pretty much set, don’t ya think?

Thank you Susan, for my Via!  It will definitely come in handy.  Mocha oats. Latte oats.  Coffee yogurt. As well as coffee on the go.

Myself with the parents on Orientation Day 1. Not gonna lie.. I pretty much felt like Jenny Humphrey.

Top bunk.  It’s actually not that bad.  Stays pretty empty up there.. leaving me to blogging at my desk.  I have two roommates that’s why there is a bunk.

But I’ve gotten ahead of myself!  Let’s go back and look at a couple days of eats shall we?  Poughkeepsie has some pretty good food!

Breakfast at a Food Network visited diner, Eveready Diner: (Sunday morning) 2 poached eggs on an english muffin with fruit.  The fruit was sliced to order!  So delicious and fresh.

Panera Bread!  We don’t have these in Tucson.. and I was actually quite impressed.  Not my favorite place on earth, but the Asian chicken salad was pretty good for lunch on Sunday.

Dinner at a restaurant in town. (Sunday night.)

Half spinach salad with candied walnuts, dried cranberries and goat cheese.

Breakfast was so good the previous day, I had to have myself a repeat on Monday morning.

Lunch was another repeat.  Well.. we found good food, so why mess with a good thing?!

After the first night at the dorm I was starving since I passed on the residence hall pizza so I had my parents pick me up for one last dinner at the same diner for one last sha-bang.

Parmesan crusted chicken breast on top greens with a bunch of veggies!  Very tasty.

On to the C.I.A. eats!  So here’s how it works at the Culinary- it is a PLY block schedule.  Which stands for Progressive Learning Year- you take a class for 14 class days, approximately 3 weeks.  Then move on.  I take six weeks of classroom classes, then I go in to the kitchens!  After the first six weeks in the kitchen where you focus on fundamentals and basic cookery, you move on to production kitchens where you actually begin making full meals.  Some of my production kitchen classes for example are “Cuisines of Asia” or “Cuisines of America” or “Cuisines of the Mediterranean” and so on.  In these kitchens you’re making the food for all of your other fellow culinarians to eat when they are on their kitchen lunch break.  This is one of the reasons why I chose to spend so much money on this school!  Everything is benefiting my culinary education.  ‘Tis also the reason why I only get two meals a day.  I get free salad bar, drinks, common breakfast items though that don’t require the common college i.d. card “swipe”.

My attempt at staying healthy- and not so stuffed all day: taste everything, eat my protein, lay off the bread and simple mashed potatoes and such.  Their bread is heavenly- but I’m going to lay off because I am aware of the gorgeous bread basket at EVERY. SINGLE. MEAL. AND. PRODUCTION. KITCHEN.  That adds up my friends!  Some people can do it- sorry, I cannot.

I’m also planning on doing my fair share of culinary indulgence once I make my way up to the city!  ;)

Lamb.  (Apparently all meat coming out of this kitchen is a little on the raaaare side. :/) With squash and purple & fingerling potatoes.  I can’t remember the sauce.  I do remember the 29 year old cute waiter (also a student!) though! Bahahaha.

Had my first oatmeal in the dorm breakfast this morning!  (Heellooo next post!)  And its official- I’ve been taking pictures at all my meals and totally embracing the blog.  Haven’t given out the address yet- but lets face it guys, its 2010, they can Google me if they want!  If people ask why the hell I’m taking a picture, I tell them I write a food blog, of course!

Since most students here live in the East Coast, a lot of people go home for the weekend.  I have a feeling the weekend will become my “blog reading” time.  Which will be good.  I miss you all already!  But it’s nice, because unlike my family and friends at home, (who obviously don’t have blogs) the relationship between myself and all of you other bloggers hasn’t changed at all- except for the fact that I am now a busy girl.  By the way- thanks so much for all of your tips/ways you keep up with blogs!  I will definitely be trying different methods out in the next couple weeks.

First day of classes tomorrow!  Will be in touch. ;)

Picnic! & Positives about Poughkeepsie

A quick update from the little town of Poughkeepsie:

  • I found a health food store. (My fear of intangible Greek yogurt bowls, almond butter and tahini jars in the dorm has been terminated.)
  • It is gray outside. Very, very gray.  I have come to accept the fact the only sunlight I’ll be seeing until May is that of the fluorescent lamps inside the culinary kitchens.  :/
  • The cold is tolerable so far.
  • There are two Starbucks within 5 miles from the Culinary Institute of America. Hoo-ray.
  • I have been a surprisingly good blogger and been taking pictures of my traveling eats…. BUT, I’m saving it for another post.

Below, I’ve dedicated this post to three reasons why I will miss my hometown of Tucson, AZ.

1 and 2. are my bests, Jordyn and Naomi. I seriously do not know what I would do without them.  I know its cliche- but really, I love them so much!  3 is Tucson itself.  Sunshine and mountains and 70 degree winter weather- you simply cannot beat it.

I made the whole recipe, and without shame, I will also say- the three of us ate the entire batch. We were road tripping it, so they definitely hit the spot, one or two or three times around. ;)

What’s worse is that some of you I’ve left many posts go unread.  :(   So while one blog may receive 6 comments or views from me in a matter of 15 minutes, I may go a whole week without reading someone else’s blog.  That’s just the way its been working out lately.  Just know that I’m not feeling pressured to read blogs (nobody ever should feel that!)- so that’s why I’m doing it this way.  But I still am thinking about you all!  Feel free to e-mail me anytime.

How do you manage real life, school, work AND blogging? Let alone reading blogs?? I love it, so I know I’ll never stop. But I’m not gonna lie- it takes time! And the past few months… well, I haven’t really had much of a school/work life, so it was definitely easier! Some of you amazing ladies manage it so well- and you girls have probably double the bloggie friends as me! How do you do it?? ;)

Last week of eats

WOW! The comments I received from all of you on my ramble about slow food, and taking time with our lives were incredible.  I did not expect such awesome responses. So thank you for that!  A lot of you either completely agreed with me or thanked me for the reminder to take a breath!  Which is what I need RIGHT.  NOW.  Hehe.. just kidding. But really… I’m leaving tomorrow!!

First and foremost, I finally grew a pair and bought myself a nice camera!  A lot of you know I’ve been coveting the Canon Rebel for months now.. but I finally decided on a Canon Power Shot S90, mainly because it will be more accessible than the Rebel (like if I want to snap a picture of my chef instructor or dinner plate!).  I LOVE it so far.  It has a lot of the same capabilities as a DSLR so I’m very pleased with it.  Still have to majorly read the manual though.

Below is my last week of eats at home!  Enjoy. :)

Currently: Friday lunch: 2 boiled eggs, raw veggies+salsa, avocado+frozen banana+xantham+guar+ice+water+stevia in the bullet, topped with coconut granola!

Last breakfast in Tucson: My final batch of cocoa-coconut-protein pancakes a la Heab.  Topped with dark chocolate shavings and coconut butter. :’( Tears of joy.

My last bowl of protein ice cream. Topped with a crumbled dark chocolate fudge baby!  Have you guys entered Katie’s vita mix giveaway yet??? Because you should. All you have to do is make one her amazing vegan recipes!  I would suggest a chocolate-covered one, naturally.

This will probably be my last fudge baby for a while too, seeing as NO MAGIC BULLETS allowed in the dorm!  Do you remember when I told you I was planning on sneaking one in? Well that was before I knew specifically what wasn’t and what was allowed. Yeah, they’re not. BOO.

Dark chocolate fudge babies rock my socks. When I make mine I basically combine the hot cocoa version with the macaroon version. SO GOOD. Especially on top a bowl of protein ice cream.

A big green salad for lunch Thursday. With chicken and drizzled tahini.

Breakfast Thursday: my last egg white with toast breakfast.

Dinner Wedneday: chicken breast with coconut butter, massaged kale salad, and raw carrots.

My last Americano at my favorite hang out/free wifi/best pizza/best deli/best cookie/best coffee SPOT: Time Market!   It’s located down by the university fyi.  (If you’re ever in the Tucson area. haha.)

$1.60 for seriously, the best Americano in Tucson, AZ.

Also the best pizza! I don’t eat pizza a lot, but hot damn! This is my favorite.

Brick oven/wood fired thin crust, veggie pizza. Lunch Wednesday.

Breakfast Wednesday: a fried egg in a heart hole. With leftover ~1/2 cup greek yogurt with coconut granola (sadly, I was out of chia.) This artist’s breakfast was inspired by Maggie.

Dinner Tuesday: with my mama at a local Greek restaurant, Fronimoe’s.

Last night at home will be spent with dinner with my girlfriends and packing the last of my stuff. Packing is such a pain, right?! Gah. We’re flying out to NY too, so its not like I can pack two cars worth of stuff. As of right now, I think I’m bringing three large suitcases (but they have to be less than 50 lbs blah), hang up bag, carry on, and a purse.  Craziness.  I don’t start school till Tuesday, so I’ll keep you guys up to date with what’s going on. Like if I live through the cold. YIKES!

Slow Food

A little preview of what is at the end of this post, POST ramble. ;)

I have come to the conclusion that I allow myself to be removed from what is going on around the world based on my decision to eat mindfully, and live my healthy life.  Ever since discovering the healthy living blog world I started thinking the world was really making a change for good. I thought if hundreds of bloggers were eating oatmeal for breakfast and bringing their own lunch to work, then the rest of the world must be catching on, right?

Wrong.

Just a few weeks ago the sermon at my church was about our generation being a “Fast Food Generation”.  I thought about it, and had to agree that, why yes, of course we are.  Everything we want or see, we want NOW.  ‘Tis the reason why sometimes I’ll sit at my laptop waiting for blog comments, while doing nothing else in the process.  We simply do not want to wait for things to happen.  It’s also the reason why half of my blog posts are about my impatience about waiting for my “thirty-something- career” life to happen.  WTF? How is this any different from the average person who chooses to spend money on the McDonalds’ drive thru??  It’s not very different at all.  Why am I so impatient for my life to “happen”- yet I secretly judge those families that choose to waste their money and calories on fast food?

It is 2010.  Our world survives and thrives daily by Convenience.  Efficiency.  Profit.  Time constraints.  Deadlines.  Cheap labor.  Technology.  Getting the most for the least amount of money.

It never stops.  Why wait in line anymore? Fandango. Fast pass. Self check out. Self service kiosks. Fast wash/dry functions.  Boxed lettuce.  Store bough cookie dough.  Meals to go. Fast food. The freezer section of the grocery store.  Drive thru’s.  The NOW network.  IN n’ OUT.  HELLO?!?!?! What the hell is going on?

Granted, I’m not saying you shouldn’t microwave your sweet potatoes anymore…by all means, that is a great way to make something delicious and healthy within a time constraint.  (Or heck, microwave the damn sweet potato because you just don’t want to pre-heat your oven.)   I’ve just been noticing my surroundings lately.  I have always been a supporter and believer of the Slow Food Movement.  I think its great: restaurants and food companies that focus on the all natural growth of food, and the slow process and the wait that is required of good, organic, fresh, local food from farmer to market.  Which is why I dedicate my kitchen life to waiting.  I GET this process.  Michael Pollen does a fabulous job of describing this in detail in Omnivore’s Dilemma and its follow up read, In Defense of Food.  This is also the reason why I truly believe high fructose corn syrup is quickly (no pun intended) killing America.  Corn is cheap to grow, resulting in becoming the ingredient that most other ingredients derive from.  Which is why it controls the food system.  How could it not?! It’s in EVERYTHING!

My point after this whole ramble is that what I failed to GET is that life is also supposed to be a “slow movement”.  Since my junior year of  high school all I have wanted is to be 27. Or 30. Or married.  “Living life”.  I honestly thought “living life” meant having a career, relationships, my own place.. that was what I was aiming for.  What I have learned is that life is also about waiting.  And living life while you wait. There is no reason why I should be anxious or afraid about what is to come; or rather (my fear)- not to come.  Because guess what?  Eventually, it will come.  My life will happen.  And by the time I’m thirty I’ll be wondering “where did my life go?”  And I’m okay with that.

Oookaay now that I’ve gotten that off my chest, here is a little tribute to waiting for food, but GOOD food at one of my favorite eateries in Tucson.  Beyond Bread has the best artisan sandwiches, different types of bread and daily soup you can get in Tucson, Arizona.  It is Zagat rated, which is a huge plus in my book, AND everything is made from scratch which I also love.  The wait is never too long, but always worth it.

My favorite sandwich: “Molly’s Crisis” – roasted turkey breast, cucumber slices, tomato slices, sprouts, homemade hummus on Rustic bread.  Which sometimes I’ll sub for wheat.  Either way, SO GOOD! Carrots on the side. This is a half sandwich, but it is a perfect serving, still HUGE.  A half sandwich with a side will come around $5. 50 which is cheaper I believe than a value meal from a fast food joint.  But I digress……

Fini.  All done and amazingly satisfied.

Hope everyone is doing fabulous.  I’m not gonna lie.. I’ve done a fairly good job at ignoring my reader and failing to post the last couple days.  But I have a bunch of stuff lined up in the blogging world, the problem is there is a little something missing in each draft.  Oh well.  They’ll come soon enough. (Patience!) hehe.

What are your guys’ opinion about waiting?  Do you think in this day of age it is impossible to slow down?  I think we all need a little bit of a slap of humility once in a while when we can’t get what we want, right away.  Have we forgotten that patience is a virtue?  Sometimes waiting gives us a chance to breathe.  I for one could you use all the breath I can get in the next couple months.

Brussel Chips?!!!?!

Yes, you heard right.

I started off with six small or large brussel sprouts.  Feel free to double this recipe if you’re looking for a meal consisting of brussel sprouts alone.  To each her own?!! (They are that good!)

Chopped off ends, separated leaves and ended up with a huge ass pile of future said, chips.

Covered with 1 T maple syrup (you could substitute honey, or oil, or even less syrup- a little goes a long way!) and freshly ground pepper.  I used a lot of pepper because I like the kick of the chunks of peppercorn that explode in my mouth. Yes, I just said that.

Lightly massaged.

Roasted for 10-13 minutes at 375 degrees. I had it at 420, and it was a little too hot.  Experiment with your oven! (Or dehydrator.)

And no, in case you were concerned..  that is NOT a hair on the plate- rather, it is the maple syrup that heated in the oven.  A la caramel sauce.

Regardless I ended with a pile of crunchy and crispy, sweet and spicy brussel sprout chips.  That tasted delightful.

Move over kale chips!  Not only do brussel chips require less handywork, less prep time, less stank in the kitchen, and probably won’t offend non-blogger friends like kale chips, they taste sooo good too! Enjoy!

Withdrawals

Before I get to this post.. I edited my “About Beek” page with a few new pictures and a more appropriate “about” for the beginning of 2010. :)

Confession:  I am leaving  home to go to the best culinary school in the country in less than two weeks- basically paying thousands of dollars to be fed ten Gourmet-worthy meals A WEEK… and guess what???

I already miss blogger food.

  1. The amount of kale, broccoli and raw carrots  I eat in a week will hardly even fit in a mini fridge.
  2. Toasters are not allowed in dorm rooms.
  3. I’m sneaking in my magic bullet, but I’m pretty positive the motor alone will have me banned from social dorm floor activities. (Who is that freak with the blender and huge ass bin of protein powder?!!)
  4. My stash of raw balls and nut butters come in a close second to my shoe and sweater collection. There is simply no room for 10+ jars of nut butter in a college dorm room. Ah.

That being said.. these last two weeks I’m fully immersing myself in 100% food+meals that I probably won’t see again until I’m living in my own apartment- oh I don’t know.. THREE YEARS FROM NOW?!?!!!

Toast with PB+honey+banana with egg whites.

Honeycrisp with lots of cinnamon, alongside Protein Ice Cream with about a tablespoon of homemade cranberry sauce- giving the ice cream a nice pink hue.

POACHED EGGS.

Eaten with a sample of pumpkin granola and a grapefruit from Deb’s yard. (Yes, Deb- I really savored your citrus!)

An Ezekiel english muffin with Deb’s roasted almond butter, honey and banana.

Check out the color of that raw honey?? I don’t know where my parents buy our honey- but we buy it by the gallon. I’m not even kidding- best honey I’ve ever had. I grew up on this stuff.

Lunch- tuna salad, raw veggies, hummus, tabbouleh, radishes.

Acai smooothie. With pumpkin granola.

Breakfast bowl- Voskos 0% with a crumbled oatie, and pumpkin ginger cookie, frozen blueberries and banana.

Salad with chicken, veggies, cranberry sauce, tahini.

Protein ice cream pimped out with more ice+water than usual, fluffled in the vita instead magic bullet, leading to a monstrous KERF bowl full of espresso-vanilla-protein-shake.   (There was even un-documented leftovers that I slurped up from the vita mix.)

Magic bullet made cocoa protein ice cream. Less voluminous, but oh-so creamy. Topped with coconut+cacao nibs.

Don’t fret- when I do eat in my dorm, you most likely will be seeing plenty of raw veggies that will keep- i.e carrots, broccoli, cucumber etc., microwaved egg whites, oatmeal, yogurt, canned tuna, apples…………

Meh, that’s all I got for now.

Just wanted to take some time to thank you all for being so helpful with my dorm+cold weather questions and fears.  Seriously the responses I got on that post were incredibly helpful.  And thank you to those of you who keep returning and giving me so much love week after week.  It means the world.

While at school, the whole point of this blog is to keep up with it!  I know my google reader-ing will inevitably have to shrink quite a bit, but just know that if you ever want to chat- you can always e-mail, and I’m still reading your blog!  I may even have to save blog reading for the weekend- but  I will always eventually catch up.

But I’m getting ahead of myself !  Hope you all had a great Wednesday.. and lots of love.
